Food does not spoil on its own. Instead, spoilage comes from the action of a host of bacteria, fungi, and other organisms that work on living matter once its defense mechanisms have failed (i.e. it is dead). In theory, food left with a complete absence of these organisms could stay fresh indefinitely – this is the principle behind canning. In the early 1800s, as Napoleon’s conquest swept across Europe, armies needed some way of keeping troops fed; earlier practices of pillaging the land were vulnerable to scorched-earth tactics (and alienated the population). Nicholas Appert developed a method of sealing food in an airtight container to keep microbes out, before cooking it to kill microbes already present. Given the right container, and the ability to produce the container cheaply, food could be conveniently preserved for mass transport and storage.
