In clay, the human hand plays at creation, forming shapes for utility or artistry alike, made permanent in fire. Clay bricks make sturdy buildings where stone is scarce, and clay pots allow for cooking, brewing, fermentation, and, importantly, the transportation of water. Because of the changes that it signified in ways of life, pottery is one of the key signifiers of the Neolithic age (though, in places, it predates the Neolithic) and pottery production begins thousands of years ago: over 20,000 in Europe, nearly that in China, and approaching 10,000 years of age in Mesoamerica, the Middle East, Africa, and Southeast Asia. The quality of clay and the ability to intensify heat all have an impact upon the pottery produced, from low-heat and porous earthenware to mid- and high-heat stoneware (achieved early in China and only until the later Middle Ages in Europe), and delicate, glasslike porcelain.
