The cacao tree is a New World plant. It was first cultivated in South America, but Mesoamerica adopted it nearly four thousand years ago. Bitter chocolate, without sugar or milk, and flavored with spices and vanilla, was made into a hot drink by nearly all the cultures of that region, from the Olmecs to the Aztecs. Europeans were quick to seize upon that trend. Like all luxury goods of the exploration age, cocoa was quickly exported through trade routes across the empires, especially to Africa, where the majority of the world’s cocoa is produced. Cocoa production can be brutal, with accusations of modern-day child slavery continuing to be addressed.
