When the sun sets during the month of Ramadan, and Muslims are permitted to break their fast, they often do so with dates, in commemoration of the Prophet. Date palms have grown in the Mediterranean, the Near East, and India for millennia. When dried, their fruits make a for a snack high in fiber, vitamins, and sugar. But Islam is not the only religion that lays claim to dates – they are significant in Jewish and Roman food cultures as well. Today, dates come in an astounding variety of preparations, from drying to fermenting, that change their overall taste and sweetness. Their flavor is often likened to honey.
