Pottery (and brick) is a fusion of clay into a hardened state. This is similar to the glassmaking process, where different kinds of silicate earth are melted then cooled into harder, combined shapes. Pottery allows for a wide range of new cooking techniques; boiling water in a wooden bowl is a challenge. While pottery has been made since Neolithic times, higher temperatures allowed for stronger bonds, allowing rough earthenware to become superseded by refined stoneware or even delicate porcelain made from kaolin clays. The latter was perfected in China during ancient times, and became a hot trading commodity in Europe in the 14th century, so much so that the term “china” became synonymous with that type of vessel.
