Pottery is an advance that can be researched from the start of a C-evo game, but it is of no value in the first few turns.
Its earliest uses may be when you want to build a Harbor, needing Seafaring, or preserve food stocks by building a Granary. The benefits of both of those will be greater as your population grows.
