Sodium chloride, most commonly associated with the term “salt,” has been a vital commodity in human societies since the beginning of recorded history. It exists in solution in the world’s oceans or in great deposits underground where oceans have dried and been subsumed under layers of rock. In this form, it was first mined and utilized to season and preserve food. Salt was crucial enough that it was used as a form of currency across North Africa (indeed, the term “salary” comes from the word for “salt”), and taxes on salt were vital for raising income for colonial regimes – and for instilling bitterness in those subject to them.
