“Spice” is a broad category, referring to anything (beyond salt) added to food to improve its flavor. Pepper, chili, cinnamon, and nutmeg are examples of plant substances that can be dried, crushed or ground into powder, and transported across long distances. Spices were particularly conducive to trade, as they remain effective in small quantities, and were a way for people to show off their global connections with just a pinch of flavor. They are linked with trade in the Indian Ocean; Indian and Indonesian merchants managed the majority of the spice trade in ancient times. But these vast networks spread across the globe, and many ingredients we think of as staples of one cuisine have roots in another – chili, for instance, is thought to be synonymous with Thai food, but its origins are in Bolivia, and it came to Southeast Asia with Portuguese merchants.
