“Sugar” refers to a variety of polysaccharides that come from a variety of sources: beets, fruits, etc. Most commonly, it refers to sugarcane, a tall plant native to Southeast Asia and New Guinea. This cane was key to the spread of sugar around the globe, with world-altering (and devastating) power. Sugarcane had long been used as food for pigs or pressed to make juice by cultivators in India and Southeast Asia, but it was difficult to transport and unwieldy. Christopher Columbus had the idea of transplanting cane to the Caribbean, where it began its long history of mass cultivation; for most of its history, this cultivation involved enslaved (or near-enslaved) labor, conducted by people at the harshest level. Sugar fueled the adoption of other luxury goods, such as coffee and tea, and shaped the tastes of empires in far-off Europe – what are Victorian-era cakes or an English “cuppa” without sugar? Its rise to common use, and the exploited labor that enabled it, altered European tastes for sweets, rendering “dessert” an essential part of British meals. It also altered the class structure of the Caribbean, setting the stage for events such as the Haitian Revolution.
