Before tea was the signature drink of the British Empire, it was a staple of East Asian leisure for thousands of years. It likely originated in northern Burma or southern China. In these regions, tea leaves are still used in salads (in Burma) or are salted and fermented as a kind of chewed stimulant (in Northern Thailand). But the stimulating drink made by boiling the leaves has become the iconic version of the plant. In India, where the British used their colonial occupation to mass-cultivate leaves, tea is often boiled in milk to make a rich, warming drink. In Japan, concentrated and powdered tea is whipped into strong and frothy matcha, and in Russia, it is often mixed with a spoonful of fruit preserves. Interestingly, one can trace the origin of tea through language – tea brought to market by ship is called “tea” in France, England, or Indonesia, whereas tea brought overland by Silk Road caravans was often called something closer to “chai,” and tea that did not have to be transported, such as in Burma or Northern Thailand, is referred to using words unrelated to Chinese (e.g. laphet in Burmese, or miang in Northern Thai).
