As agriculture spread, so did a divide in which foods were considered common and which were luxuries. The latter might include imported goods, select parts of meat, or those remaining animals, plants, and fungi that had eluded domestication. Such is the case with the subterranean fungus, the truffle. A component of European food since the Roman era, truffles are hunted carefully with a specially trained pig. These uncommon fungi are used now as an element of fine cooking, and their rarity is only compounded as wild spaces and artisanal knowledge shrink.
