Alcohol is one of the earliest human inventions. Ancient peoples from Mesoamerica, Europe, Africa, and Asia fermented maize, wheat, fruit, honey, and rice using agents as varied as natural yeast, bacteria, and even human saliva. Wine made of grapes has a special place in society. It is transformed from grape juice as naturally occurring yeast breaks down the fruit’s sugars, converting it to alcohol and changing its flavor. First identified in Georgia during the Neolithic, wine was a common drink across the Near East and Mediterranean. Homer described troubled seas as “wine-dark,” and Jesus turned water into wine. At the same time, edicts from Mohammad to Chandragupta Maurya to the Buddha forbade their followers from indulging (or over-indulging) in the intoxicating drink, thus indicating its temptation.
